Goat Cheese and Spinach Omelet (Serves 1-2 people)

Ingredients

  • 2 eggs & 3 egg whites
  • 1 1/2 cups of fresh spinach
  • Half a small onion chopped
  • Half tomato chopped
  • 1/2 tbsp of fresh minced garlic
  • Pinch of chili flakes
  • Sea salt and pepper
  • 1/2 cup of crumbled goat cheese

Directions

  1. Mix all ingredients together in a bowl except  the cheese
  2. Heat 1 tbsp of organic butter until melted
  3. Pour egg/ingredients in pan
  4. When omelet begins to set crumble the cheese on top
  5. When cheese melts a little serve on a plate (flipped half- moon style) and cut in half (perfect to share)
**Cook in a deeper pan, so the omelet is thick and fluffy (Puff like)**

Eggs are a great source of protein. Just 1 egg contains 6 grams of high quality protein and all 9 essential amino acids. They are also an amazing source of choline, which plays a role in regulating the brain, nervous system and cardiovascular system. I consider eggs brain food:)
I also prefer goat cheese over cow cheese. It’s lower in calories, higher in protein and higher in calcium. The higher calcium content naturally boosts your metabolism with a higher oxidation of fat (fat burning). I find that people who tend to have allergies to dairy products from cows digest goat products much easier.

Organic Chocolate & Banana Oatmeal (Serves 1 person)

Ingredients

  • 1 cup of cooked steel cut organic oatmeal
  • 1 pack of stevia (or 1tbsp of honey or Agave)
  • 2-4 tbsp of organic dark chocolate chips (70% cocoa or higher)
  • 1/2 banana cut into slivers
  • 1/4 cup of chopped walnuts

Directions

  1. Cook oatmeal until ready
  2. Add chocolate and stir on low until melted
  3. Pour into bowl
  4. Stir in bananas
  5. Crumble fresh walnuts on top

Enjoy the rich flavor of dark chocolate in your oats and benefit with a punch of antioxidants! I like to use organic dark chocolate, at least 70% cocoa or more. Antioxidants protect your body from aging caused by free radicals. Dark chocolate contains nearly 8 times the number found in strawberries:)

*Special Occasions can be healthy and delightful at the same time:)
