Mash up banana in a small bowl. Beat egg whites in a separate bowl and combine with banana. Add cinnamon and protein powder and mix. Slowly add almond milk and stir until smooth.
Grease a medium sized skillet with a teaspoon of coconut oil (organic, extra-virgin) Cook mixture/batter like regular pancakes (@ medium heat over a skillet for a few minutes per side or until golden brown). Makes 4 mini sized pancakes or one extra large pancake
